Spelt

My husband's having some tests done to see if he's allergic to wheat. I bought some spelt flour and made a spelt soda-bread loaf the other day, which was okay, but after a few hours you could've hammered nails in with it.

What else can I do with spelt flour? Do you just use it the same way as wheat flour? I'd like to bake more bread but the recipes I have seem to be half spelt and half strong white bread flour.

I hadn't noticed just how much wheat we had in our diet until I decided that we needed to cut back on it. Unfortunately I love bread, biscuits, cakes, pies etc and do a lot of baking so adapting is an essential requirement! Any ideas gratefully received.

It may just be that your husband has an intolerance rather than an allergy, and a 50/50 loaf may be possible. It may also be that a spelt yeast loaf rather than soda bread will not go so hard so quickly.
