How do I make pasta sauce from scratch? (tonight!!_

I want to make a tomatoey pasta sauce for tonight.

I have tomatoes, garlic, and onions. What else do I need, and how do I do it?

blitz your onion and garlic together to make a paste. Do you have any basil or oregano? That can go in with the blitzing.

Are they tinned toms or whole toms? Chop tomatoes.

Heat a little oil in a pan, add the onion/garlic mix, cook for a few minutes. Add the tomatoes, some tomato puree if you have it, cook for a short while, add some water. Bring to boil and simmer.

Well,you have enough.
Slice onions,fry in a bit of oil.
Add garlic (and some thyme and/or oregano if you have.
Addd tomatoes (tinned?)
Simmer until a little thicker (20 mins)
Add a bit of sugar,salt and pepper.
Would be better still with some tomato puree.

Any other veg around to put in?

It's dead easy - just chop the onion finely and fry in some oil (olive oil preferably, but veg or groundnut fine too), crush or finely chop the garlic and add that after about 4 minutes. Keep stirring until onion and garlic soft. Add tomatoes (chopped small). Add some salt and pepper and a pinch of herbs if you have some (basil, thyme, oregano - dried is fine). Simmer gently for about 15 minutes.

You can also add other veggies - eg a chopped pepper, courgette, aubergine, some mushrooms, some sweetcorn

I am mixing roasted veg into the sauce so won't bother adding to sauce mix, is that ok?

I only have freeze dried basil will that be ok to add (did ask dp to buy fresh herbs but he forgot)?

whichever you choose. I often use tinned tomatoes and cut up some whole ones.

If you use the whole tomatoes it gives a "fresher" taste.

The herbs will be fine!

LOL at 'if you have some wine on the go' as if I wouldn't Grin

So. Fry onions up, add garlic, add fresh toms + sugar, bit of tom puree, bit of wine some basil...maybe can scrounge origano from housemate. Sound fine?

(know this should be obvious, but am not natural cook)
