Does anyone have a recipe for spaghetti with meatballs for 2 adults. I feel a bit adventurous so i thought i would make it from scratch

god she uses so many ingredients in everything (delia)

leave out the bacon and use half minced pork and half minced beef instead

just had a look, seems a lot to do. Not too good cooking, wonder if there is an easier one if anyone knows of one????
If not i might gibe delia's a go

I probably can find it online but I use a Sophie Grigson one

Tear up 1 slice of bread in a bowl and add 4 tablespoons of milk

Chop up 3 cloves of Garlic and about 4-5 Tablespoons of Parsley

Put in the bowl containing the bread about 500gr mince/ Half the Garlic and Parsley, salt and pepper

Whip and egg and puit about half the egg in the bowl too

Mix them all together and then form them inot small balls

Fry some oil in a pan and add the meat balls, turn them till brown all over

Add a tin of tomatoes, glass of red wine , the rest of the parley and garlic and a teaspoon of Dry oregano and a tablespoon of tomato puree

Heat up until all hot and then treduce to a simmer and cook for about 30-45 mins.

add salt and pepper at the end and water if you need to thin out the sauce a bit

Server on top of spaghetti with a lot of parmesan

This is the one I do.

Spaghetti and Meatballs

180g Spaghetti or Linguini
For the Meatballs
4 Thick slices white bread, crusts removed and torn up
4 Tbsp Milk
400g Lean Minced Beef (or minced turkey, if you prefer)
2 Garlic cloves (chopped)
1 Egg (beaten)
2 Tbsp Worcestershire sauce
Big handful of fresh basil leaves (chopped)
Salt and Black pepper

For the Sauce
1 500g carton Passata
200ml Beef stock (stock cube will do)
2 Tsp sugar or a dollop of mango chutney
Salt and black pepper

Pre-heat oven to 200
Put the torn up bread in a large bowl, add the milk and allow to soak in for 5 mins
Add all other meatball ingredients and mix together with your hands (you really have to squidge it all together)
Roll small amounts in your hands and place on a lightly oiled baking tray
Should make around 20 - 30 smallish meatballs
Bake for about 20 mins.

Add all sauce ingredients to a large saucepan and bring slowly to the boil and simmer until the meatballs are baked.

Cook the spaghetti in plenty of salted, boiling water.

Add the meatballs to the tomato sauce and simmer for a further 10 mins.

Tip
Use fresh basil it really is so much nicer.

This is what I make for the kids and it is very basic, but you can jazz it up:

meatballs:
400-500g mince
2 slices bread
Small onion (red is nice)
About half tsp salt
1 tsp Herbs eg origano
1 egg

Whizz bread in food processor, add onion, chop, then salt/herbs/egg, whizz till combined. Add meat, pulse briefly until combined (too much mixing makes it tough). Shape into small walnut sized balls, place on non-stick baking tray (I use non-stick foil), bake at about 180C until cooked (about 15min). I usually cool and freeze them at this point.

Make basic tomato sauce (eg fry onion, add chopped tomato/origano/bit of sugar and salt, and simmer for about 20 min). Put in meatballs, let them simmer until heated through.

Cook spaghetti, serve with sauce and lots of parmesan.

Should add that often I just get a jar of Bertolli sauce and freeze child sized portions to add the meatballs to! Very simple!
