I'm part way through baking a MASSIVE Madeira cake as the first tier of my wedding cake (so it's important that it works!)

The recipe says 1.5 hours at 150c with a pan of water on the shelf below. It's been in for an hour and the edges are starting to crisp up but the middle has barely changed - still very very raw.

So, WWYD... stick it out as it is and risk the edges burning? Cover it? Turn the oven up? Remove the pan of water?

you could cover the top with foil to stop it burning
