Ken Hom Red thai chicken curry recipe

Hi, all my cookery books are in storage and whilst I can remember what goes into this recipe I can't remember the exact quantities. Does anyone have the recipe and would you mind typing up the quants for me, don't worry about how to make it as I can remember that.

Is it this one?

This recipe was taken from Ken Hom 'Simple Thai Cookery @ and was cooked at our in-store wok demonstration and can be cooked using any of our woks.

Serves 4

Prep Time : 15 mins

Cooking Time : 20 mins

4 medium chicken fillets

1 fresh lemon grass stalks

11/2 tablespoons of vegetable oil

2-3 tablespoons Thai red curry paste

3 tablespoons finely sliced onions

3 tablespoons coarsely chopped garlic

1 tablespoon finely chopped ginger

1 tablespoon fish sauce

2 teaspoons sugar

1 teaspoon salt

1 x 400ml (14 fl oz) tin of coconut milk

1 large fresh red chilli, seeded and chopped fresh coriander to garnish
