I have just made pancakes for tea and have loads left over.

Can I put it in the fridge for breakfast, or will it have turned into a thick mess?

crepe style or thick american ones?

Nigella says the thick stuff is alright in the fridge overnight.

It will be alright in the fridge, but it will probably separate in some weird way, and need stirring again in the morning.

It's fine in the fridge but may settle and need a quick whisk up before cooking it up in the am.

I tend to just cook up the pancakes leave them on a plate to cool and microwave them the next am - saves washing out the pancake pan twice.

Always leave mine in the fridge, it goes a bit grey sometimes, and needs letting back down with milk but is fine. Other alternative is cook them all, fridge and reheat.

I've got some batter in the freezer, as an experiment.
