I have a bowl of roasted red and yellow peppers, a chorizo ring and a block of feta. Also lots of cherry tomatoes, some red onions, salad, puff pastry, eggs, a handful of small new potatoes, and lots of leeks and carrots plus store cupboqrd bits and bobs. I was thinking about a pepper, chorizo and feta frittata with tomato and red onion salad, and salad leaves. Carrot and white bean soup for tomorrow. Any other ideas? They have to be a/ quick to make (can't stand up for very long), b/ easy, and c/ diabetes-friendly (ie wholegrains, no refined carbs etc - hence why the pastry is in the freezer).

I think your meal idea sounds lovely, perfect for summer and very suitable for a diabetic diet. The new potatoes you could cook up and include in the frittata. One tip, if you cook the potatoes then allow to cool in the fridge it alters the carbohydrate molecules and results in them being lower GI than freshly cooked without cooling (you can reheat them again) - this will make them more diabetes friendly.
