Meals for one?!

Im seperating from my p this week and I am trying to think of meals that I can cook for just one! I am so used to doing huge portions of food that my brain just freezes when it comes down to yummy but reasonably cheap meals for one person - Any ideas?! I am thinking about doing some bulk cooking of lasagnes etc but would ideally love some new ideas for suppers. Thanks!

i luuuuurve cooking for one - so much less hassle and less chopping of things. when i cook just for myself i tend to do 'quick' things live stir frys, pan fried fish, chicken etc. When doing this cooking i tend to use lots of south east asian flavours - giner, chilli, fresh coriander etc. It's ideal for cooking for one.

My dad is now cooking for one, and he has his freezer full of bolognaise sauce, curry, stew etc that he bulk cooks and splits down..... he used to be chef cooking for 300 plus and since we all left home and mum died, he cant bear to cook for one, so he bulk cooks, freezes and then microwaves as and when. Quick & Healthy and easy for one: Frozen Cod Fillets that come in blocks take about 4 mins in microwave ditto with brocoli that dpoesn't need peeling etc and shove abaked pot in oven or micro also.

It is a faff to cook for one - when i lived on my own i used to make corned beef hash (cheap) open tin n cube beef, silce washed pots with skin on and cut onion chunky all in pot in oven the night before. (weak gravy over the top) hleathy version - have cabbage done in micro with it!!.

Generally I set a day aside and cook big pots of the usual stuff then freeze - do it when you in the mood, out cd on and have aglass of wine!!! Grin then just pull stuff out a you need it without feeling that whats the point feeling.
