Philadelphia light!

I was planning on making carrot cake cup cakes for end of term party so ordered in 4 x 300g tubs of philadelphia the other week on offer, now turns out quite a few parents are bringing in cake incl one birthday boy! Expiry date 1st August we go on hols 29th so need to use it as can't freeze the tubs. If I made a new York cheesecake can I freeze it? or what else can I do with it? Thanks

You could use some for sandwiches - gorgeous with ham or smoked salmon.
Add some to tomato sauce or white sauce.

I like to make it low fat cheesecake where I use caster sugar with Philadelphia Light instead of icing sugar. Also add some fruit.

I got my cheesecake recipe from a fellow mum at:

and it worked for me. Kids love it and keep asking for it. Also I used low fat digestives but you can use whatever you have.
