Hi everyone,
I'm off on holiday in a couple of weeks. It will be in a villa and I'll be doing alot of the cooking (my choice).
There'll be anything from 10-20 of us and I wondered if any of you had some favourite summer recipes to share?
It's in Spain so there'll be lots of lovely ingredients around.
I've made risottos in the past which-though fab are a real arseache in 30 degree heat!

We love paella, great for feeding the masses and very Spanish. But similar to risotto so maybe not for you then.

Pasta with a home made tomato and herb sauce or pesto sauce
Cold meats and salads (our children love thinly sliced Serrano ham with melon slices)
Home made pizzas
Pan fried fish with salads
Roasted red peppers with feta cheese
Variety of salads: couscous, potato, greek and leafy salads, rice
Lots of fresh fruits
Kebabs
Burgers - you could choose something different from beef burgers like cajun chicken burgers, tuna and sweetcorn burgers, spiced lamb and feta burgers
Spatchcock chicken with salads
Herb and garlic breads
Slow roast pork served in burger buns
Spanish omelettes
Roasted Mediterranean vegetable lasagne

BBQ a lot - then you just have to add some tasty sides/ breads etc. Should make life a lot easier.
