I just a delicious made-up supper.

I made--

Potato, Spinach bake.

In a pan I fried off some finely diced carrot, oinion, celerey and a smudge of garlic. Then I added in 4 big cubes of frozen spinach.

I made a cheesy white sauce, then added almost all of it to the spinach mix.

I sliced and boiled up the potatoes, layered them in a dish, added the cheesy spninsh mix, another layer of potatoes, spinach stuff then the last of the white sauce on top, in the oven for 30 minutes. Really warming and tasty!!

Sounds nice. I think those forzen spinach cubes are fab.

Did you use a strong cheese?

Bet that would be nice with some crispy bacon too. Well as long as you're not a vegetarian!

I used a medium cheddar. I thought it would be nice with feta crumbled on top. Bacon sounds like a good addition!

Mmmm yes feta. My mum used to do a spinachy thing with feta which I think was inspired by somethhing pizza hut used to do called 'priazzo pizza pie florentine' that was back in the 80s though!
