DH is not home again tonight for supper for the 4th night in a row. I am notoriously lazy when it comes to feeding myself. I cook for the kids at 5pm (but its too early for me to eat) and when he is home I cook (what I think are) pretty good meals. However when he isn't here I either microwave something or just graze all evening on junk. Can someone inspire me with some enticing recipes that might also help me loose a bit of weight?

I've just had a quick paella. Microwave rizzaza meditteranean tomato rice. dry fry a bit of salmon, then flake it,squeeze of lemon juice and mix them all together. don't know if particularly low fat - but is delish and made in about 5 mins.

I bought a stirfry veg tray yesterday so I could whip up a quick dinner tonight after work. I came with a plum/hoisin sauce. I fried some pork loin strips first, chucked in the veg and noodles and it was FANTASTIC and healthy too!

I had pasta with a big spoon of philadelphia cheese chucked in with some fried bacon, sliced mushrooms and garlic - yum!

rofl kbear. I want to sit down and enjoy a meal even though I am on my own, but wasn't expecting it to reach "that" level of enjoyment.
