Gooseberries?

I've just realised the spiky bush thing in my front garden is in fact a gooseberry bush Blush - good job the stork wasn't doing deliveries otherwise there'd be a toddler or two under there by now.

what I do have is one bowl of gooseberries in the fridge and loads more to ripen on the bush. Anyone got any delicious suggestions about what do with them? I have a vague memory of my mum emptying pretty much a whole packet of caster sugar on them as a child but other than that...

All suggestions gratefully received!

Lots of recipes here on BBC food section. I would do a cobbler with pastry and lashings of cream!

We've got a bumper crop this year. Super-easy recipes are:

Jam - equal weight sugar (I just used normal granulated sugar) to berries. Bring gently to boil to dissolve sugar. Boil vigorously 5-7 mins. Put in jars.

Gooseberry fool - gently stew some gooseberries with sugar (white or brown as you prefer). Up to same weight sugar to gooseberries, depending on how sweet you like it. Cool. Whip some double cream. Stir gooseberries through it. Serve.

i used the waitrose online recipe for gooseberry fool and it was so simple and yummy.

I made lovely gooseberry crumble last week:

Crumble 100 g of butter with 100 g sugar and 200 g plain flour.

Add 150 g sugar to 750 g of gooseberries and whiz them in the microwave (just until they are hot so the sugar melts a bit). Top with crumble mix and bake at 175 celcius for 30 min (maybe less or more, ready when top is golden). Serve with custard or vanilla ice cream.
