Adapting cakes for diabetics

I've started to do a lot of baking, being the domestic goddess that I am... My very fussy dad is very keen on my cakes but he's type 2 diabetic and shouldn't be eating them.

Is there anything I can use that won't affect the taste too much but might make them a little more suitable for him? I'm aware btw that just about everything in a cake is bad news for him and he shouldn't be eating them at all but he does and all the nagging in the world doesn't stop him.

I've even tried coconut flour with no success whatsoever!
