Ideas needed for leftover sliced roast beef

I bought a job lot of sliced roast beef from Costco for a party and have a good amount left over. My kids won't eat slices of it or have it in sandwiches - why I have no idea. But I've managed to use up some by chopping it up, mixing it with gravy and putting it into pitas to make sloppy joes. But I need more ideas please. Could I turn it into cottage pie or similar? Help

I would:

Stir fry it with lots of veg

Mix with some Amoy garlic and black bean sauce, green and red peppers and red onions - roll up in fajitas

Can you make a sort of corned beef hash with it perhaps?

Make tiny yorkshire puds and put in middle for the kids with gravy (canapes)

Add brown sugar perhaps and caramlise it to make a sticky chinese beef dish

simply reheat in gravy for roast beef dinner

like those ideas mmaumtotwo - specially the stirfry one - as I have a million peppers to use up too!
