What was/is your vegetarian dinner?

Every time I start this thread I always get inspiration. We're not a vegetarian family but we do love it

Tonight I did dss favourite. Homemade bean and veg enchiladas, kebab style red cabbage which is softened in salt then rinsed then lemon and oil added,plus salad of onion, cucumber,tomato with fresh coriander, mint sauce, lemon juice, and a bit of fenugreek powder.

So what was/is your vegetarian dinner?

I made falafels on Saturday night, using soaked not canned chickpeas and it was amazing. I had loads of parsley growing so it was great to use heaps of that, cost buttons to make. Serve in pitta bread with a mint dressing & hummus :)
