I know this has been done before but searches throw up too many hits. Can you please share your best curry recipes chicken or lamb ideally. It cant be veggie or dh would divorce me.

Its our movie night on saturday and i'd like to make a decent curry that wasnt from a jar.

My favourite is Chicken in Red Pepper Sauce

2 red peppers, deseeded and chopped
1 onion, peeled and chopped
small piece ginger, peeled
2 garlic cloves,peeled
1 red chilli pepper, deseeded (or seeds left in if you prefer a hotter dish)
1 large tomato, skinned & deeseeded
2 tsp cumin seeds
1 tsp fenugreek seeds
1 tsp turmeric
1 tsp ground coriander
1 tsp chilli flakes (or to taste)
8 chicken thighs on the bone, skinned and chopped in half with a cleaver
oil
water
fresh coriander, garam masala

  • Place the peppers, onion, ginger, garlic and chilli pepper in a blender with a little water and blend to a thick paste. (You may have to stop the blender and push it down with a spatula a few times)
  • In a saute pan, heat some oil or ghee and add the cumin and fenugreek seeds. Allow to sizzle a little and then add the pepper paste.
  • Stir-fry the paste until it starts to change colour and bubble.
  • Add the tomato, ground coriander, ground turmeric and chilli flakes
  • Finally add the chicken thighs, stir well, turn down the heat and simmer for about 40 minutes, stirring occasionally.
  • Once cooked, turn off the heat, stir in 1/2 teaspoon garam masala and some fresh chopped coriander.

My fave is as follows

2 onion
4 garlic
1.5 inch ginger
1 red chilli

Blitz all the above in a blender

Fry off 4 chicken thighs or 4 chopped chicken breasts n move to one side

Grind up 1tsp fennel seeds, 1tsp cumin seeds 4 cardamon pods

Melt butter in the pan u used for the chicken and put in the onion/garlic mix n cook for 5 mins. Add the ground seeds 1tsp turmeric, 1tsp paprika and 1/2 tsp cinnamon. Cook out for 2 mins. Add 1/2 pint chicken stock 2 tbsp tomato purée and bring to the boil. Add the chicken.

Leave it to simmer for a couple of hours. Add 2 tbsp of double cream of cremé fraiche before serving. Garnish with flaked almond an fresh coriander
