I'm defrosting a massive side of salmon I bought some months ago as it was half price and seemed like a bargain - me and DH love salmon. I'm hoping to do st least three different meals with it so would love to hear your favourite salmon recipes please! I already do and love en croute, Asian salmon salad, oven baked with oil and lemon.

Salmon and broccoli pasta - in a bit of a creamy sauce with some toasted pine nuts and, for a real treat, some crispy pieces of chorizo thrown in.

These salmon burgers are really good.

Salmon coated in pesto with a sprinkling if cheddar and ideally parmesan. Grill and serve with new or jacket pots or wedges and salad...yum.

Cook whole, wrapped in buttered foil, serve with new pots and the Jane Grigson herb sauce with parsley and tarragon - it's the sauce with reduced cream and butter quite rich but lovely.

Then make 'proper' fishcakes with mash, parsley and quite a lot of salt + pepper. Egg and breadcrumb them and serve with any leftover sauce.

Teriyaki salmon - my utter favourite. Lots of recipes on the net. Serve with noodles or wasabi mash and green beans. Always delicious.

Steam salmon fillets. Chop spring onion & coriander. When salmon is done heat a small quantity of sesame or wok oil in a frying pan. Sprinkle steamed salmon with the coriander & spring onion & drizzle with the hot oil. Serve with tenderstem broccoli & green beans & optional few potatoes or carrots.

Nicoise salad (lettuce, green beans, black olives, boiled eggs, French dressing) with salmon instead of tuna is delightful.

I'm not a Jamie fan, but I was cooked this by my BIL and it has been my favourite way to cook salmon ever since
