Best cakes/buns/etc for a school cake stall

I always seem to volunteer for cake baking (easy & doesn't involve organising anyone Grin ) but it would be nice to have some different recipes for a change. What do you all make for cake stalls?

My criteria - I prefer small cakes (usually make banana muffins as one option) as you can sell them individually or as a plate of 6, also ideally something easy to double/triple up quantities, and also ideally cheap ingredients (as in, not loads of ground almonds etc, I don't buy cheap & nasty just for cake sales, you still get my nice organic flour/sugar Grin )

Flapjack type traybake - you could add dried fruit, seeds, choc chips to mixture or drizzle top with melted choc.
Cookies - the big "supermarket" style ones, I find these great for using up odds and ends of sweets/choc etc
Cupcakes/buns - simple sponge cakes, iced with plain white glace icing and decorated simply with a a smartie or jelly tot or choc button. Our local groups sell loads of these on a 25p a cake or 5 for a £1 on a pick and mix basis from cake stands (needs plenty little bags available)

Rocky road is dead easy and as cheap/expensive as you want it to be. Just melt a load of chocolate, and throw in marshmallows, cherries, rich teas, currants, anything you like. Put in fridge, let set and then dust with icing sugar and cut into squares. Always one of the first to go at our bake sales. That and anything with lots of garish icing Grin

Big cookies sounds like a good idea, will prob. get dd to make some decorated cupcakes (she's 10 so reasonably hygiene conscious!)

My mum's down to make Rocky road as her oven's not working.

At a recent cakes stall I helped out, nicely decorated fairy cakes, and chocolate brownies seem to sell best. Carrot cake was alo very popular.

Carrot cakes - dont think they are expensive apart from the frosting. I use a recipe for a whole cake off BBC good food but use nice foil muffin wrappers.

Real vanilla with specks is always cheap and can be decorated with anything.

rice krispy squares.

I was wondering about lavender cupcakes - its on a market stall, so someone suggested that slightly more 'grown up' things might be appropriate. And I've got lots of lavender!

Takver, what about indvidual bakewell tarts, not the type with sickly icing and a cherry on the top, i mean proper ones with almonds on the top? or another nice recipe is Lamingtons their Australian, simple plain sponge cut into squares and coated in a chocolate type coating and rolled in coconut, could find you a recipe if your interested or you could google it, they're something different from the norm i guess.
