Please may we talk at about interesting and exciting vegetable dishes?

I'm very aware that it may be a short conversation.

I just need to broaden my vegetable horozons.

Side dishes or main, either would be helpful.

Hugh Fearnley Whatsit's book is supposed to have some fab recipes in. I just do some boiled carrots in the oven with butter and black pepper when I fancy a change

What sort of food do you like?

I have Claudia Rhodan's book on Moroccan, Lebanese and Turkish cooking, which includes many lovely veg dishes. Lots of spices and interesting flavours, not just steamed or boiled veg.

Any favourite vegetables?

Baked veggie risotto? I do this with asparagus, broad beans, frozen peas and jarred artichokes.

Veggie chilli? Can shove all sorts of vege in there - sweet potato or butternut squash work well.

I can dig out the recipe for a nice Moroccan style carrot salad if you want it?

Jamie's stuffed butternut squash is good - google Hamilton Squash recipe.

Take long red peppers and cut in half and deseed. Stuff them with a mixture of mashed feta, finely chopped red onion, herbs, garlic, lemon juice and bake until all lovely and oozey.

I love steaming various vegetables, courgettes, fine beans, tenderstem brocoli, mange tout, sugar snap peas, asparagus, usually about 3/4 types and then pour over a mustardy vinagrette when they are still warm, eat warm or cold.

What kind of veg dishes are you after? I have gazillions, but need to know what veg you like/will eat, spicy or not, creamy dishes or plainer, herbs you cant tolerate and spices you will not entertain? Give me a list of those and I shall give you a fortnight and some of vegetable dishes

Potatoes Dauphinoise
Cauliflower Cheese
Green Beans (any other green veges) with garlic and parsley butter over the top
Red Peppers stuffed with fennel, balsamic red onions and goat cheese roasted then served with a green salad.
Oven roast the following with olive oil, garlic, chilli flakes--beetroot, red onion, squash, red peppers, potatoes. Throw over some basil and balsamic vinegar at the end and crumble over feta if that takes your fancy.
