I love roasted veg. Get a roasting tin. Put in veg eg chopped peppers, mushrooms, onion, celery, courgette, etc (i usually put new potatoes chopped in half too) with lots of garlic, rosemary, olive oil and a bit of salt and shove in the oven for as long as it takes.....as you can tell I am not very good at very precise following of recipes! Enjoy Smile

Marking my place as I need some ideas too! Here are a few I do:

Thin sliced roasted aubergines with garlicky yoghurt dressing

Butternut squash roasted with thyme and chilli flakes

Roast peppers with roasted garlic (bit of a pain though as the peppers have to be peeled, but if you do a big batch they keep for quite a while)

I keep meaning to try braised chicory/celery/lettuce but not got round to it yet.

Sorry its boring and requires no effort but my favourite is rocket and cherry.toms with grated parmesan over.

Could eat it every day.

If you like spice, deep fry in batter some sliced aubergine and serve with a lime pickle. Hot but yum.

We do veggie mondays so I'm always looking for new ideas. My normal dishes are;
Veg Curry (squash, babycorn, green beans, sugar snap peas & sweet potato)
Roast Veg Bake (med veg, tin of cherry toms, basil and seasoning topped with parmesan crumble)
Spinach, Squash & Feta Filo Pie
Shallot & Cherry Tomato Tarte Tatin
Savoury Pancakes
Leftover veg omelette Grin

Side dishes are ; chantenay carrots braised in orange juice & cumin, broccoli with lemon and chilli, green beans in tomato sauce. Check out the Jamie Oliver at Home book there are loads of great veg & salad dishes.
