sutherland kale recipes please!!

we (DH) accidentally planted too many seeds in our polytunnel, its gone mad, we have so much kale I can't keep up with it and running out of recipe ideas....its a bit like spinach and cooks like spinach (flat leaf, not like curly kale), we've had kale quiche, kale and chicken pie, kale and tomato pasta, steamed kale on the side with all sorts of meat and potatoes...anyone have any other ideas??
Anyone ever tried freezing it??

My dad grows kale just for me now after I became addicted to a gwyneth Paltrow recipe (bear with me it is really good!!). It's a fairly basic stir fry and I use to knock up quite a big batch and freeze it in lunch time size portions for me for work and then family sized portions for a quick tea that I could just bung in the microwave.

Fried rice with kale and spring onions

225g kale, stems discarded and chopped finely
1-2 tbs of veg oil
2 garlic cloves
3 spring onions
175 brown rice
1 1/2 tbs soy sauce

Steam the kale until cooked then stir fry with rest of ingredients, I also bung in some fish sauce and sometimes some chilli if I've got any - really anything else that would go in a stir fry. It's very simple and surprisingly good, I've given the recipe to loads of people who have seen me eating it at work Smile

Kale chips. Massage the kale with some olive oil and seasoning and place in a low temp oven (150C) until dried out. Really yummy.
