normally buy a batte mix for pancakes but figured better if made my own, but don't know how to please help

The basic mix is 125g plain flour, one large free range egg, one tablespoon of sunflower oil or melted butter, a good pinch of fine sea salt and 300ml milk. Put everything in a blender or food processor and whizz to a smooth batter.

Or – to make it the old-fashioned way, by hand...

  1. Sift the flour and salt into a large bowl. Stand this bowl in a damp cloth to hold it steady and make a hollow in the middle with a whisk or wooden spoon. Break in the egg and add the oil or butter and a splash of milk.
  1. Beat the egg and milk together and gradually draw in the surrounding flour, making sure each amount you pull in is nicely mixed before you pull in more.
  1. At the same time keep trickling in the milk in slurps until it is all used up.
  1. Soon, all the flour will be mixed in and you should have a nice smooth liquid. If however, despite your best efforts you have a few lumps simply strain them through a sieve into a jug. That's it.
  1. Some recipes advise you let the batter stand for half an hour or so, to let the starch molecules soften. But nowadays flours are so refined there is no need – just beat or whizz and go straight into the cooking.

i only have self-raising flour in the cupboard - will it be ok to make pancakes with this? please say yes!

I don't think it will make any difference with pancakes - I'm sure I've used it before.

Was just about to ask the same thing about self raising flour! Its all I have in the cupboard.
