If you cook it over a long period of time e.g. in a chilli, would it break up? Confused

Vegetarian chilli made with Quorn minceand loads of mushrooms is our houshold staple! Smile I batch cook huge amounts in my slow-cooker, chuck in any leftover veg from the fridge (carrots, peppers. courgettes) along with lots of onions and tinned toms, and freeze it in small portions. I usually let it simmer for 2 hours after it's come to the boil.

It would be fine. I use it to make a Shepherd's Pie filling and leave it to cook in the slowcooker all day.
