Interesting sausage roll recipes please!

I've got an end of course lunch that I said I would make some sausage rolls for. I'm after a quick and easy recipe for sausage rolls - with a twist! I'm not fussy what that twist is; some sort of interesting flavour, but apple seems a bit to predictable and dull.

Just needs to be quick, easy, tasty and will make everyone think I'm a domestic goddess

Thank you!

Oh, and any tips on how to make them so that they don't explode would be gratefully received :)

Add pickle inside.

Mmmm, delicious!

I've got half a jar of red onion chutney in the fridge, do you think that would work as onion marmalade?

No wonder my MIL who's a WI member thinks I'm useless in the kitchen

i often do grated apple! always very well received!

onion relish....i squish it in with the sausage meat but i might try it on the pastry next time!

pesto would work too i'd imagine.

some parmesan and chives, with a little extra parmesan over the glazed pastry maybe?

and for the not exploding, I always use whole egg to seal and for little ones i always leave a seam to one side, press it down well to seal. For bigger ones I tend to roll them right over and really press them down onto the join. Also pop them into the fridge for a bit before baking, I think it helps the pastry set a bit.

Oohhhh, pickle too - I imagined I'd have to go shopping for all sorts of things tomorrow but I've got pickle as well. Might make two different sorts!

My husband adds bashed fennel seeds inside and sesame seeds on the top. Yum.

Spinach and a smear of ricotta and black pepper or feta mixed in with the sausage meat work well.
