Bacon recipes

I have a packet of cooking bacon in the fridge, the value offcuts stuff. It's very cheap but very nice in cooking. What I normally make with it is penne alla'maratriciana - pasta with a sauce made with onions, garlic, tomatoes, chilli, bacon, red wine. It's one of my favourite meals. However we had this the other day and I'd like to make something different with some more of the cooking bacon. Any ideas for recipes - pasta sauces or something else - that use chopped up bacon?

Lots of lovely things with rice or pasta! How about:
1 - Not quite a stroganov - cook bacon with an onion and a little garlic, then add lots of chopped mushrooms and season Use some thyme if you have it. Quick squirt of tomato puree and mustard when they've cooked down a bit, and some cream or sour cream to make a sauce. If that sounds too heavy, cook instead with a bit of chicken or mushroom stock and add just a little cream. Add chopped parsley at the end, and serve with rice or pasta. Ready in 15 mins.
2 - Carbonara - fry bacon while pasta's cooking, and mix together a couple of eggs with salt, pepper, a couple of tablespoons (the 15ml ones, not the serving spoon type!) of olive oil, and plenty of parmesan. Drain your pasta, put the bacon and the fat into the pasta pan and return the pasta to the pan too. Mix, and pour over your egg mixture, which will cook in the heat of the pasta. Serve quickly before it goes grainy. Done in the time it takes to cook spaghetti!
3 - With peas in macaroni cheese baked in the oven.

Or - it's great with red lentils in a soup - not seasonal - but I made bacon and lentil soup last week, it was so cold!

Mmm thanks for the ideas! I would never really think to put bacon in a risotto, but why not, I guess? We like Spanish omelettes here too and tend to put chorizo in them, but bacon would work too.

I like the mushroom idea! Not sure we've got any mushrooms though. I might possibly make carbonara for supper, that's a good idea (and we have some broccoli to have with it, it wouldn't be nice with a salad with an oily dressing).
