How do I cool skate simply?

DH in his wisdom went down to the front to the fresh fish place and came home with skate Hmm. What do I do with it? Am looking for a knob of butter/wrap in foil/bung in oven type thing as we're on holiday so none of my usual ingredients to hand and going home tomorrow so not buying any!

He couldn't have got cod, oh no...

Fry gently untill just cooked, add butter and capers to pan, heat through and pour over.

I like it simmered in a tomato sauce with new potatoes & peas (think Jamie has a good recipe for it in his Jamie's Dinners book but any tomato pasta sauce would work).

Or you can flour it and pan fry so its golden on both sides, but finish it off in the oven because it can be difficult to get the thick bits cooked through in a pan.

I really like it - it looks quite boney, but when its cooked the bones all stay connected where they are and you can pull the fish off in spaghetti-like strands with a fork.

I too was baffled when DH came home with skate. I put it in a tray with a bit of butter and salt, covered it with foil and stuck it in the oven- it was nice. :)

Just season the flour, coat both sides and fry in butter/olive oil. Delish. The DC love it tooSmile

Thanks all. I fried it in olive oil and a bit of seasoning (no flour). It was ok but DH said it was bland. I said don't bloody buy weird fish when I'm away from my kitchen then. Ungrateful sod! :o
