Oh BUGGER. Just baked 2 sponge cakes in 2 sandwich tins, got them out of the oven at the right time, looked lovely and golden. Just been to do the biz and they've sunk a bit on top and inside it's just goo! I've chucked them back in the oven - any advice from the experts pleeeeeeeeeaaaaaaaaasssssssseeeeeeeeee

If you're going to sandwich them together, put them dipped side together and fill with butter cream. Or fill the dip with, say, fresh fruit and cream and pretend it's meant to be like that.

but what about the goo? Should I leave them in the oven?

I would - stick a cocktail stick or knife in it to check it's cooked this time.

Or, if the goo is confined to the middle, cut a circle out so it looks like a polo mint and pretentd it's a ring cake.
