Boring question about cooking in advance- sorry!

OK so I am preparing some food for a party on Saturday. Trouble is I have a manic day tomorrow and have my entire family here on Saturday so I could really do with getting most of the cooking/baking done tonight. So - do we think the following things will keep till Saturday teatime if I make them now and put them in the fridge?

sausage plait
smoked mackerel pate
mini cheese tartlets
home-made houmous
cheese straws made with ready-made pastry (actually those are pretty quick, I could do them Saturday morning)

houmous will be fine, so should pate.

Tartlets you could prepare the pastry and filling and just bake at the last minute, same as cheese straws.

Sorry don't know what a sausage plait is.

Agree with the above. Pastry has to be made fresh on the day or it won't be crisp. Damp things are fine in the fridge.
