I made too much batter for tonight's toad in the hole... What else can I use the batter for? Or alternatively can I freeze it for a few weeks?

Not sure about freezing the batter, but you could cook some yorkshires and freeze them (I did this at Christmas). Then you have your own version of Aunt Bessie's that will cook in about 3 minutes, but 100 times nicer because they're home made.

Yes you can freeze it. You can also freeze sponge cake batter.
