Quick, help before I poison everyone!

So, I am making beef casserole tonight, beef has been defrosting all day (in fridge then just at room temp). Have started cooking and it's still frozen in the middle. Have discarded the very middle bit but used most of it, some of the edges a bit frosty!

My thinking is as it will be cooking for about 3hrs it shouldn't do us any harm. Dh and I will eat it tonight, plan to reheat a portion for ds tomorrow lunchtime.

Does this sound all ok? Or am I missing some vital food hygiene rule about half frozen beef.....?

Can't you give the frozen bits a bit of a nuke on defrost and then whack 'em in? If not I'd work on the principal that after 3hrs anything iffy will be well 'dead' ;)

I only thought of microwave defrosting after I'd started cooking (it's been a long day....) it's now in the oven. If anyone thinks it might be dodgy, tell me now, otherwise will just hope for the best!

I would eat it. You can cook loads of stuff from frozen after all. So long as you ensure the middle is at an appropriate eating temp frozen food should be fine, and 3 hours in a casserole dish should ensure that.

It will be fine. You can buy frozen beef to cook from frozen, I wouldn't bother microwaving it to be honest I'd just dish it up.
