Biscuits/cookies advise needed please

In biscuit/cookie recipes that I've read the instructions usually say to roll into walnut sized balls and place on baking tray. As I've never cooked them before could someone please clarify if they will just fall down into cookie shapes during cooking or should I flatten them on the tray before placing in the oven? TIA Smile

Yes - they sort of melt in cooking and so end up as the flat disc you associate with cookies from places like 'Millies'.

I have watched it happen - don't worry :)

Weigh your dough when measuring fit baking. Just stick some cling film on the pad of your scales and weigh out at the appropriate weight. Much more reliable than trying to eyeball. Also ensures they all cook at the same speed. Then roll into balls and smoosh slightly :) they scan also be frozen raw this way - weigh and roll, lay out on a baking sheet, drape with cling film and freeze. Then Tip into a plastic bag and bake as required. Add 2 mins to baking times if baking from frozen.
