hello all, I'm looking for a recipe I found on the back of a flour packet around 1978 Grin It was for a walnut cake with a coffee icing. The cake was a large one which as I recall was made with 8 oz flour, maybe 6 of sugar, 6 of marg and 3 or 4 eggs. Unknown quantity of walnuts.
The icing was a fudge type made by melting the butter and icing sugar with some milk and adding strong coffee/essence.
Twas lovely and very popular. Even now I am known for my walnut cake but sadly although I kept that packet for years, the cake cannot be reproduced. I have tried but none have been quite the same.
Tragedy.
I really really want some of that cake now!

Similar perhaps. Of course it's not set in stone but the one I made was one cake which you cut in two horizontally. It was quite dense too and could not be described as a sponge.

Can you remember the brand of flour? If you contact the manufacturer, they may have it in their archives.

I looked up the Mcdougalls and Bero sites but neither was Right. Contact might be better.
Remember BeRo?
What other flour companies are there?

In that case NicekettyNacketty I would cook it all in one tin and cut it in half horizontally and add an extra 2oz of flour - I reckon that would make it about right Smile

I've got a BeRo book and the only Walnut cake in it is one with Fudge icing, doesn't say about adding coffee essence.

4oz marge
3oz caster sugar
1 tbsp golden syrup
2 eggs
6oz sr flour
1 tbsp milk
50g chopped walnuts

fudge and glace icing

Grease a 7inch tin

cream marg, sugar and syrup till light

beat in eggs with a little flour

gradually add remaining flour and milk and nuts

bake for 4--45 mins at 180degrees c

when cold split open and sandwich together with fudge icing

decorate top with white glace icing and walnit halves.

do you want th icing recipes as well?

The glace icing recipe says you can add flavouring so maybe thats where the coffee comes in? My mum would have used that coffee essence in a bottle, can't remember the brand....Camps?????

Fudge icing;

1oz butter
1tbsp milk
1 tbsp brown sugar soft
2 tsp golden syrup
4oz icing sugar

melt everything apart from icing sugar in a saucepan. add icing sugar. allow to cool in a bowl. When set use it to sandwich cake together.

Glace icing

4oz icing sugar
1 tbsp warm water
flavouring and colouring

Mix till smooth then add flavouring/colouring

Golden syrup! Yeah I saw that one but it isn't right. Have emailed McDougalls.
Maybe I just need to experiment widely and test all the results Grin
