Pork escalopes

I bought some as they're boneless and no fat and hubby doesn't like meat on the bone but I'm stuck on how to cook them. Any ideas anyone?

Bat them out thin between sheets of greaseproof paper. Dip in seasoned flour, then egg, then fresh breadcrumbs. Fry in butter. Only need a minute or two each side. Remove from pan. Stir in some lemon juice and then pour that over the escalops - v easy.

Or cut into strips. Then saute some onion and mushrooms, add the pork, stir in a teaspoon of curry powder, add a small amount of stock and simmer for 5 mins. Add some creme fraiche or sour cream, and then serve with tagliatelle or rice.

I had these on Friday night! I cut into 2cm thick slices, browned some onion then added pork, fried genty then stirred in some grainy mustard and creme fraiche at the end. In hindsight I should have added a little stock as worriedsadmum suggests (hope you are not too worried or sad), as the sauce was v rich! Served with new potatoes, beans and asparagus.
