Meatballs

I bought some turkey meatballs for me and dd (8 mnths) to have for dinner tonight. Anyone have a simple tomato recipie in which I can cook/serve with? Planning to serve with pasta or spaghetti. Thanks

Do you mean a simple tomato sauce recipe?

The simplest ever is this one (from Marcella Hazan):
2 tins tomatoes (whole or chopped)
70g butter (yes really!)
1 medium onion, peeled and cut in half
pinch salt

Combine all ingredients in a saucepan, simmer gently uncovered for 45 min, stirring occasionally and mashing any lumps into the sauce. Remove onion halves and toss with pasta and cooked meatballs. I think this is about enough for 400g pasta (ie 4 servings plus meatballs).

You can of course add other things - my mum's thick tomato sauce includes chopped onions, garlic, basil, red wine and a dash of sugar.

I would normally do this as a simple tomato sauce,

Chop x1 onion & a couple of garlic cloves

  • gently fry off the onion & garlic in a little butter until soft but not browned

Add x1 tin of chopped tomatos, bring to the boil and simmer, add some basil, or other herbs (I tend to chuck in whatever I find in the cupboard), salt & pepper - the longer you simmer it the better I find, at least 20mins but longer is fine

Shock 70g butter?! Jeezo!!!

I ended up frying off some garlic and onions then adding chopped tomatoes, a grated carrot, some stock and herbs. Was very tasty and went down very well with little duckling too Smile

Don't knock it till you've tried it!! I thought it was a misprint in the cookbook at first. My confidence in Marcella Hazan was nearly shaken...now it's my favourite tomato sauce ever. You don't need much so it's not butter overload, I promise!

That being said, what you did sounds lovely Smile
