My ds wants to several cakes for his friends birthdays tomorrow. He wants the cake to be original so has come up with the idea of two round cakes with a square cake on top. He wants to fill the cakes with strawberries and cream and then put butter icing on the top, but I am not sure about the butter icing. I have never done a tiered cake before and we can't get cake dowels here so i thought we could put straws cut to size in the cakes to stabalise them , will that work ? Would he be better just putting cream on top of the cake as well rather than butter icing ? I was going to suggest weighing the eggs ( I think he will need five ) and then doubling the their weight in flour, sugar and butter. What do you all think ?

Yes you are right about the quantities. I think cream would work better on top as well but he wants to write a message...
