Making something out of stale bread, cheese and tomatoes?

Hi, I have half a loaf of stale tiger bread (crusty top). I want to do something like chuck a tin of tomatoes, some herbs, some chopped olives and cheese on top and bake it in the oven? Does anyone have any ideas? Also got onions, peppers and mushrooms available.

Do you have any eggs? I'd do savoury B&B pudding with all the ingredients except the tomatoes.

Mock crab?. My gran's wartime recipe went something like fry onions in a little butter stir in cheese breadcrumbs, tomatoes and and and cook on a low heat (you may want to food process for smoother texture.

I'm now thinking do eggy bread, top with fried onions, peppers, tomatoes etc in olive oil and grill with cheese on top?

And an egg! Not and and and! For brucsheeta just slice bread brush with olive oil and seasoning and bake in oven serve with a tomatoe salad.

Tomatoes+a few peppers+stale bread = gazpacho. Add garlic and a slug of olive oil and red wine or balsamic vinegar.
