can you cheat when making carrot cake type cupcakes???

ive seen some carrot cake type cupcakes with cream cheese frosting and would love to make them but i once made carrot cake and found it faffy. im only making them for my husbands cricket club "teas", so dont want to spend loads of time on them plus have two small children to look after!!!!

don't know. THe batter will be the same, won't it? I do the Mary Berry one and you just bung it all in I think. It is not much faffing about, other than the grating carrots.

actually I have made cupcakes with that mixture once and it was fine.

I'd be able to answer this better if I knew what was so faffy about carrot cake. It's no more effort than any other cake, apart from the grating-the-carrot part, and you can't really avoid that.
