I've never had a dud from Smitten Kitchen:
smittenkitchen.com/2010/04/new-york-cheesecake/

And because I'm bored sitting here pumping breastmilk (TMI?) I've done the UK measurements for you Smile

Crumb crust:
226g finely ground graham crackers or cookies such as chocolate or vanilla wafers (digestive or rich tea biscuits work well)
113g unsalted butter, melted
113g sugar
1/4 teaspoon salt

Very tall cheesecake filling:
5 x 226g packages cream cheese, softened (Philadelphia is recommended for cheesecakes but if you?ve had success with other brands, feel free to use them again)
394g sugar
3 tablespoons all-purpose flour
1 teaspoon finely grated lemon zest
1 teaspoon finely grated orange zest
5 large eggs
2 large egg yolks
1/2 teaspoon vanilla

Cherry topping:
283g sweet or sour cherries, pitted (they?re not in season here so I used frozen; worked just fine)
2 tablespoons lemon juice
56g sugar (can be increased up to 112g depending on sourness of cherries)
1 tablespoon cornflour
118ml water
