I don't have a recipe. I just throw it all in together. DH and DD seem to enjoy it.

Cut some chicken into chunks and brown

Add some roughly chopped or diced vegetables - potato, sweet potato, swede, squash, carrots, celery, onion, parsnip, etc.

Add some stock and maybe a splash of white wine too. Bring to boil and simmer for a few minutes.

Add some fresh or dried herbs.

Transfer to a warm oven and cook for an hour and half or longer. Just keep checking there is another liquid so it doesn't stick or burn.

Well there must be 101 ways to do it but here's mine.
Brown the chicken pieces in the casserole dish and then remove. Add a bit of oil and fry onion, mushrooms, carrots, whatever, add a bit of bacon if you like, till a bit softened. Add tablespoon or so of flour and fry. Add hot water or stock, bayleaf, herbs, wine, whatever, stir well and bring to boil. Put chicken bits back in. Put all in oven on moderate heat for 1,2,3 hours, whatever....

I've just realised I confused you with Enid (of the homemade chicken nuggets...)
I didn't cook meat until quite recently but I feel I've mastered chicken casserole now!
Taking out the chicken bits obv isn't necessary but I find it easier to stir all the other stuff, and to add the flour which I like cause it makes the gravy thicker, without the pan being full of chicken

Beetroot - I make the veggie casserole exactly the same as my meat casseroles, minus the meat and with veggie, not meat, stock. Saves prep time.

i have to do it al without touching raw chicken.. once it is cooked i dont mind. i have to cook chicken before cutting it

Wil do roman chicken next time..a dn those nuggets

Is it chicken breasts/portions?

Just throw them in the pan without cutting them for now, and cut/chop when cooked.

Next time buy diced chicken, or get the butcher to chop it for you

I never cut the chicken - I use drumsticks and thighs, not breasts - if you cook it a long time slowly it just falls off the bone.
