Duck fillets

DH has bought 2 duck fillets (with their skin on). Just wondering whether any MNers have any delicious recipes....

Score the skin, pan fry on high heat skin down til crispy tnen turn over and fry other side for a few mins

Put in a warm over

Add red wine and a little orange juice to the pan, stir frantically then reduce. Bung in some sliced bits of orange just before serving and heat through, season.

Serve with colcannon or mash and green beans

I am trying this tonight for romantic valentines dinner (ha!) after doing a "duck" message search, sounds soooo tasty. Having nibbles of mixed olives and crunchy bread, then this recipe with pan fried new potatoes and a rocket salad, followed by a cheats pudding- fru wild berry cheesecake with a few sliced strawberries and cream.

Followed by lashings of good lovin' and an early bed (er re-write that bit I'm pregnant just cut to the early bed )
