Need some 'lunch' ideas please

Following on from the 'what's for dinner' thread (great inspirations!) I need ideas for lunch.

I have DP coming over on fridays, and am running out of ideas. Have done soup (great, but not for summer ) sandwiches (boring) and baguettes, (good but ri=unning out of filling ideas.)

Have eggs, baguette, tuna, cheese, tinned fish. Am defrosting chicken to make soup for dses (ill with colds) but not got enough for all of us. Have salad and tomatoes. Cabbage and onions, so coleslaw an idea.

Then again could go to supermarket tomorrow morning!

Roast a chopped up pepper, red onion, mushrooms, whatever in olive oil and a bit of balsamic. Mix with couscous. Add fresh herbs, lemon juice.

Definitely coleslaw. Nice with red cabbage and carrots. Mayo and a bit of salad cream.

Mmm love roast veg, but wll not have the oven on midmorning! Might do salad with tuna, olives, tomatoes and fresh bread. (he's not keen on tuna, might have to substitute tinned mackeral instead?)

pasta salad...cooled pasta, mix some olive oil, mayo, lemon juice, tiny bit mustard or sweet chilli sauce maybe..and throw in tuna and what ever you have, olives, chopped tomatoes, avocado, sweetcorn, bolied egg.. bacon, anything really..always delish. this is my staple for kids lunches esp when we run out of bred Wink

or a kind of nicoise with cold boiled potatoes, green beans, boiled egg, tuna and nice mustardy dressing.. or frittata..

If you have a george foreman grill, pannini's are nice made with part baked baguette, loads of grated cheese and whatever filling you like.

Thanks all - have decided on a frittata-like omelette, with the last of the bacon and some sliced cooked new potatoes. Have pulled some (v v v small) lettuce leaves from the window box and will make coleslaw and a bit of salad to go with it.
Dinner tonight will be the rest of the new potatoes, herrings rolled in oatmeal( never done that before) and some chard from the garden mixed with a cheesy sauce!
