Freezing cake questions

Can I freeze cupcakes and mini cakes?

How do they turn out?

I'm making cakes for my brothers wedding. It's just going to be cupcakes and mini cupcakes in a variety of flavours.

The wedding is on Monday. We are having a mass baking session in Sunday afternoon but I was thinking of making a few batches Friday or Saturday and freezing them to decorate sunday.

Will they dry out? Is there a way to do it right? Any type freeze better then others?

Also, I have just found a tin or that carnation ready made caramel stuff. Can I use that to flavour the sponges?

Yes you can freeze them, allow to cool completely and cover before freezing, on the day you want to decorate take them out and allow to defrost covered in a teatowel. If you are worried they will be dry you can always brush with a little sugar syrup before you ice them. Make sure they are totally defrosted before you ice them with fondant or the icing will sweat.

Yes you can add carnation caramel to the mix - a couple or 3 tablespoons mixed in with the sugar and butter should do the trick.
