Hello all!
I love cooking but want to expand my repetoire a bit. I only really cook for me, so am happy to experiment and write it off if something doesn't work.
I treated myself to half a leg of lamb yesterday and have a fair bit left. I'm not very experienced in cooking curries but quite fancy having a go with the left overs. Thing is, I'd rather not leave the house today (hair dye incident) so was wondering if these ingredients could be used to make a curry:

lamb leg meat
rogan josh powder
spring onions
dolmio tomato pasta sauce
rice
mushrooms
cream

thanks for any suggestions!

Put a hat on and go out to get a tin of tomatoes and some real onions (ideally ginger, garlic and a jar of Pataks paste as well). Seriously - no hair dye can be bad enough to justify eating a curry made with Dolmio.

Haa, thanks, I think I knew deep down you would say that...
I do have some real onions actually - also some peppers and basic condiments and stock cubes. No to ginger though, bleurgh!
I wonder if I might have an ancient tin of tomatoes lingering in the cupboards.... or if I can con a nearby neighbour to go to the co-op for me....

You do need ginger for a proper curry base, you dont taste ginger in the actual finished meal though.

If you've got a rogan josh blend then use that, the veg and put some water in to make a sauce - cook slowly. You don't need the dolmio. If you had some tomato puree a bit of that might help but will be fine without.

You an finish it off with the cream if you want but again not essential.

Or don't do curry and cook the lamb with the dolmio, some herbs - splodge of wine if you have some and make it 'mediterranean lamb' and serve with rice.

1)Rub lamb with spice, brown meat in a fair bit of oil
2) add 1 grated onion and garlic, stir fry until fragrant (not brown),add dolmio and a spoon if seasoning. Simmer gently at leat 2 hours for melt in your mouth lamb.

Sure, dolmio not ideal, but not worse than a can of chopped toms.

Oh, come on, you do not need ginger for curry. You don't really need anything in particular for curry.

I'd forget the dolmio and just stick in lashing of cream. Et voila a delicious korma. I make it like that all the time.

Listen to everyone else about lamb curry. But try to save some lamb for a salad tomorrow: baby spinach, finely sliced red onion, cucumber, tomatoes, crunchy lettuce eg romaine, lamb and feta cheese. If you make lots you can have half as a salad (which is nice with black olives in too btw) and have the rest in a toasted pita bread with humous and chilli sauce for supper.
