apple muffin recipe WANTED please

need a moist recipe, like as if i bought them in m and s or somewhere else yummy

I've got a really good one, but it's at home and I'm not. Secret is using oil not butter. Will dig it out and post later tonight if you've not already found one.

Dry
9 oz plain flour
3 tsp baking powder
1/2 tsp salt
1 1/2 tsp mixed spice
3-4 oz sugar (to taste)
Wet
1 egg
5 fl oz milk
6 oz apple - peeled, cored and very finely chopped
3 fl oz vegetable oil or 3 oz butter, melted
2-3 oz raisins or chopped walnuts (optional)

  1. Prepare muffin tins. Oven to 190-200 deg C.
  2. Mix together all dry ingredients in bowl.
  3. Beat together wet ingredients with fork, stir in apple.
  4. Pour wet into dry, stir quickly until combined (c.30 seconds only). Add raisins/walnuts during final strokes.
  5. Spoon into muffin cups. Makes 10-12 standard-size muffins. Bake c. 20-25 mins until tops are lightly browned and spring back when presed gently.

Warning: These are gorgeous. They are very lightly spiced, you can add more cinnamon if you prefer.

This recipe is from Susan Reimer's muffin book which I can heartily recommend. Her recipes and her tips for success are foolproof.

thanks for the book link, its a great way to use up the off fruit in the bowl! and maybe the kids will eat them before i eat them !

do u happen to have a healthy choc muffin recipe?
that i oculd use with the apple in it as well

or could i add cocoa powder?

i want a treat for them thats not bought (ie costing me a fortune) and its kinda healthy!
