Can I make a beetroot salad with pickled beetroot?

I've never had pickled beetroot, just bought three packs by mistake. Oops. Was planning to make a big beetroot, goat's cheese and chives salad. This won't work with pickled beetroot, will it? Gah.

It will taste vinergary! You would have to add sugar to take some of that taste away. Only buy beetroot in vaccuum packs, not jars!

Thanks Jimmy! I bought regular (non pickled) ones now. They DID come in a plastic pack, not a jar - that's how they fooled me :o

If you're looking for a way to use up pickled beetroot, may I suggest putting some chunks of it in a baguette with some Brie? Or on toast with some pate? The sweet vinegar works really well with those flavours. Yum.
