Ok I am starting a what's for dinner thread as a thinly disguised boast for my divine creation tonight.

I made the yummiest scrummiest pizza ever tonight (I know it is not rocket science to make pizza but was divine), served with a green salad and pesto field mushrooms....still drooling
(Toppings by the way...,homemade pizza sauce, roasted baby peppers, roasted kumara, roasted carrot, roasted broccoli, roasted cauliflower, caramalised red onion, diced tomato, diced camembert, shredded baby spinach and grated cheddar)

Sounds fab.

DS1 will be at Scout camp, so I'm guessing pints of packet soup and the best part of a loaf of bread followed by several hours of an entire tent's worth of sweets

DS2 at a birthday party at soft play place, so tea out for DD and me too.

I have suggested to DH he gets a McD on the way home, or holds out for a ham sandwich and salad.

good luck with the sushi Jimmy...what are you putting in it? Time to smile sounds like some great experiences hope the scouts have marshmallows to roast. Cognito would be slightly more excited about your dinner if I ate meat but give me a good lentil ball and I am all in.

tomatoface I used a scone type base for the pizza and tbh it is the only bit I would like to improve on as dh and I love thin and crispy bases but I can never get the scone base as thin as I would like so still experimenting on that front.
Risotto sounds divine calamity is a faff one you have to hover over or is it a bung it in the oven and it absorbs all by itself one?

calamity that risotto does sound good but I'm with OP in that I can't be doing with standing over the hob for ages stirring and it still turns out shite

Red prawn curry (take away) with Cauliflower rice (homemade)

Easiest and tastiest pizza base ever...

8oz plain flour
1/2 tsp fast dry yeast
1/2 tsp salt

Put the flour and yeast into a large bowl. Make well in the flour, add 6floz tepid water and 1tbls olive oil and work into the dough. Knead for about 10 mins, put in greased bowl, cover and leave for 1/2 hour, knead again, then roll/stretch into bases - makes 2-3 decent sized bases.

Top with whatever and cook at 220c for 12-15 minutes.

The uncooked bases freeze brilliantly too - roll ready, freeze and top and cook from frozen. Extra 5 mins or thereabouts needed.

We're having a bbq tonight with satay chicken, lamb kebabs and various salads. Yum.

I burned the risotto (apparently I couldn't be arsed either) so supper was fish and chips. Yum!

I've just had mine - mussels in creamy garlicky white wine sauce, simplest thing ever to cook! Was lovely but am still a bit peckish, should have done some oven chips with it.

Jimmy sushi looks fab and i think i will attempt this myself!

We have had a "sunday" dinner a day early as im at work tomorrow and then me and kids are off to a Jubilee party so no dinner shall be cooked (dh will have to forage in the cupboards/freezer!) So it was roast chicken, mash, roast pots and carrots, asparagus, steamed carrots, hm yorkies and gravy (bisto).

Currently have an experimental apple and stawberry coconut crumble in the oven for afters with custard (packet).

ThInk i will also give those pizza bases a go.

We just had a completely delicious salad of various leftovers: wild rice, roast butternut squash, red onion, chopped pecan nuts, fresh goats' cheese. It's a variation on one I had a while back, with wild rice, avocado, spring onion, pecan nuts, dried cranberries and shredded chicken, which may or may not have had feta in too - lovely.

Thai chicken curry but without rice as I'm trying to low carb, don't feel at all full or satisfied though. DDs jacket spud with cheese and beans looked so appealing!
