I am just finishing a cake for a party tomorrow and I need 250g of sr flour and 85g of pl flour....I only have 200g of sr left, plenty of plain....what to do? All neighbours are out and bubba asleep upstairs....?

Do you have any baking powder? - if so make up the difference with plain and add 1/2 a tsp of baking powder.

I dont even buy self raising flour, it's a bit of a gimmick really.

It will be fine. just use 200g sr and 125 plain. Might be a little less aerated. no one will notice.

If you have it chuck in half a tsp of baking power.

Or if you are feeling energetic separate the eggs and beat the whites then fold them into the mix.

If you don't have baking powder, double ortreble sieve the flour from height - lots of air, don't over mix and make sure butter/ marg is very soft so you don't whisk out all the air from the flour. I soften the marg/ butter in the microwave for 20/ 30 secs if its from the fridge.

You could whisk the butter/ sugar and eggs before sieving in the flour to limit blending.

Bllcks! Something went wrong the bottom of the cake just fell (glooped) out through the cooling rack Blush was sure skewer came out clean - will blame oven and try again, sent dh out for sr flour. This didn't happen last time, it was a triumph Sad
