Might sound like a silly question but can I make them the day before I need them or will they end up going all chewy? They will take a few hours to set won't they?

I often make them the day before. Chill in the fridge, once hard they shouldn't melt again.

They dont take hours to set, maybe an hour max in a cold fridge.
