Carrot salad? I have the Magimix ready...

What do I add to the carrots?! I've eaten a really nice one with sultanas, but no idea what sort of dressing.

Or any other good combinations?

There is a Nigella one with peanuts that is lovely. I think it is in the Forever Summer book.

In France they use vinegar as dressing.

I like shredded white cabbage, carrots, very finely shredded onions, sunflower oil, bit of lemon juice, salt, pepper. Basically coleslaw but without the mayo.

Just wine vinegar? Might give it a go.

(sorry, can't do peanuts in this house!)

Grated carrots, sultanas/raisins, lemon juice, honey, finely chopped garlic, crumbled feta cheese, chopped parsley.

It's tangy, sweet and crunchy.

You could also add boiled lentils to make it more substantial.

...and a bit of sweet paprika.
